Skand, you have a place here anytime and we'll put a to-go container together for your DH and the kids. I'll just throw more potatos in the pot and make extra gravy.

I have Pinto beans in the crock pot ..and will make those chorizo tacos mentioned last night... spanish rice and soy'cuttash (there's edamame in the mix) to go along with

I picked up some shellfish (few of each.. clams, scallops and shrUmp) for a mini cioppini, nice salad and crusty bread ...for tomorrow. It's raining again ...soups and casseroles for this week

Seven Layer Gratin ..from Family magazine
Corn Chowder.. my version with a sweet tater in the mix
Seafood Lasagna.. if I can figure out what to substitute the fake crab with.. blah!
Split pea or Navy bean soup ..along side some chicken strips, etc.
Cabbage rolls..
Hot pants Chili ..err.. hot in the pants, later

Everyones supper sounds so yummy! I made a chicken casserole, had some left over c. breast and pasta that needed to be used up. It should be very, creamy and cheesy! There is a loaf of sourdough bread in the oven right now and I have a green salad too!

DS made chocolate chip cherry muffins last night. There are a few left for a snack later. He did a wonderful job, they are so good!
 
I turned my something chicken into a deep dish chicken pot pie..
I sub'd in spinich, broccoli, diced potatoes, cheese, onion....instead of celery, peas, leeks and carrots, and whatever else the recipe called for. lol

Aneesa, on your version of corn chowder, how many sweet potatoes have you decided go in? - I wanna try it sometime, dont like the same thing everytime I make it, gets bland to me after the third time. lol


Redfeathers, you should know by now, if you offer me a spot at the table, there better be a bedroom calling my name! hehehe Love the idea of to-go's for the kiddos and Jim.

skand... I just put one small'ish-medium sized "white" yam in there ..peeled and all that, of course

It doesn't make it overly sweet, but you can taste it ..and I use plain ol' white corn kernels for the corn portion ..not creamed (tends to be sweeter). You can also slip other types of root vegies in there ..just one ...and it gives a little variation to an already good recipe ..a "white" carrot, a parsnip, a turnip.. and so on

I browned some ground beef after I finished making tacos ..and will put that in the crockpot with the pinto beans ..with some tomatoes and other "chili" things. I can refrigerate what we'll eat in the next day or so, and then freeze the rest of it.

I still have plans for Cioppini tomorrow ..and DH even sounded excited to try it ..which I kind of expected since he likes gumbo and jambalaya and creole and such...
 
Last night I made a great soup;

Cheesy ham and potato soup

2 1/4C.cubed cooked potatos(save 1C. cooking water)
1 1/2C.cubed ham
1 lg. onion, chopped
2t.oil
1/4C. dry milk
3T.flour
pepper
3C. milk
1 1/2C. shredded cheese
1C. chopped frozen broccoli


Put reserved cooking water and 1/4C. cooked potatoes in blender, blend until smooth., set aside.

In large pan saute ham and onion in oil until tender. In bowl mix dry milk,flour, pepper,milk and blended potato mixture until smooth. Stir into ham mix, bring to boil, cook and stir for 2 min. or until thickened.

Reduce heat to low. Add cheese, broccoli and rest of potatoes. Cook and stir until cheese is melted and soup is heated through.

Sauted onion, garlic, sweet red peppers, celery, and mushrooms with lots of paprika and oregano. Added sliced chicken sausage, diced tomatoes, and tomato paste. Mixed with macaroni, topped with red pepprer flakes, and told DH it was goulash!
