i am in need a some assistance. my granny used to make a dish that was like chicken and dumplings. i have very fond memories of this. but i am unable to reproduce it.
it is a very long time since my granny was alive and nobody else in the family remembers this dish.
so i would very much appreciate any help and suggestions. i have tried many times and failed miserably. i am struggling to recall if it was a soup or a stew, or what batter to make for the dumplings and how long to cook it. i'm sure i've made each and every mistake possible. but since i wasn't bright enough to write anything down, i am doom to continue repeating these errors over and over.

Try to describe the dish you are looking for.

For instance - my grandma's chicken and dumplings was a soup (not thickened) made from chicken (with skin and bone), onions, carrots and celery - slow cooked for hours. The dumplings were light and fluffy and floated on top. After the dumplings were added to the boiling soup, the pot was covered and cooked until the dumplings were done - no lifting of the lid! The soup magically thickened as the dumplings cooked.

What was your grand mother's ethnicity ? That may help define the dish. My MIL was Hungarian, and I still make her traditional Hungarian 'Chicken paprikas' - served with a dumpling.

do you remove the bones & skin before you add the dumpling?
can you give me a quick recipe for dumpling? not sure i'm doing this right, either.

i have had hungarian chicken paprikas. yum indeed.
my granny was german. came to america as a very small girl.
she also made something she called a 'kniffle' (the 'k' is not silent). but this isn't what she used for the chicken dish. she used something else.

You make the soup or stew any way you want and then:

FLUFFY DUMPLINGS

2 c. all-purpose flour
1tbl baking powder
3/4 tsp. salt
1 c. milk
1egg
1/4C salad oil
Mix dry ingredients together, add milk and salad oil. Stir until mix is dampened. Drop by spoonfuls into hot stew or soup. Cover and cook under low heat 10 minutes.

Waste not, want not. Tonight we had open face chicken sandwiches, fried mashed potato cakes, stuffing and sweet corn. I thought it was better than last night. The Princess was unimpressed.
 
I managed the pizza last night--but the blessed Locusts ate mine too! I got two slices, went back for more and it was gone. I was pretty upset, it took me all day to make those.

So, today while they were at school, I followed sour's saying above, and used leftovers to make my very own pizza. Just the way I wanted it. Yum!


For dinner tonight, I had pork country style ribs. I'd been thinking sweet and sour, but my mind just didn't picture Asian side dishes, etc. So I put them in the crockpot with honey mustard sauce. Maybe mashed taters and broccoli.

I have a huge ham thawed out to go for this weekend.
