Hey Grandpa, What's for Supper? Part 2

I'm not really eating dinner tonight. I just had a snack and am in charge of snacks after church tonight, so I figure I'll be snacking all day.

I am just trying to consider breakfast for supper once a week, usually ends up being friday though. End of the week, moms out of steam.

Since DH and I sharing a car again.. and he's testing for a belt tonight... I got a little rushed for my shopping spree ........so.. there will be some ground chuck kebabs with fresh herbs from the backyard, a store bought onion and tomato minced in, as well ..some nice basmati rice fragranced with cardamom ...a sort of curried eggplant dish (it's creamy, slightly spicy and has a little dill and mint hint to it) ...maybe some fresh naan.


But.. I'd really rather just have SUSHI!!!

ams3651 - That's the beauty of Breakfast for Dinner/Supper. It's meant to be used when it's most needed. For me, Wednesday started because my hubby works late that night. When the kids were little, it gave them a little something to look forward to and gave me a much needed break and rest. It quickly became a habit tho, so now when other circumstances remove us from B4D, the kids want a make up night another night.

Aneesa's Muse - Sounds delicious! I kinda sorta had some sushi for dinner tonight. We were in charge of the after church snacks and California rolls were one of the items we brought. I realize you sushi purists wouldn't count California rolls, but it works for me. The rest of my meal is some chips and salsa. I think I'll eat better tomorrow.

Breakfast for dinner - what could be better?LOL I'm guessing most of us BYCers do that often. We have to do something with all those eggs.
I should try making a quiche again. We had many years ago, but never again. I'm not sure why.

Backyard Buddies, when we come in late after chores or aren't real hungry we often have a snack supper. Cheese, crackers, veggies and dip or a favorite of my DH's is to make a plate of chips, grated cheeses and jalepenos all layered and melted in the microwave.
I have to watch myself though because I'm a snacker and I can eat alot.LOL

I haven't really cooked the last 2 Sundays. We had Easter and then I hosted a baby shower last Sunday. So, this week we need a good comfort meal. A roast in the crockpot, gravy, mashed potatoes, veggie and a salad. I hope to make a jello or fruit salad, too.

and actually for here thats relatively mild humidity. Today is one of those days I love my toaster oven so I dont have to heat up my small kitchen. Making Chestnut Burrs, I think its a PA Dutch thing. Take a pound of hamburger and mix like for meatloaf, form it into a circle and push the center in making it like a bowl. Mix up about 3 cups of your favorite stuffing and mound it in the center. Not sure what we're having with it, probably peas and watermelon already in the fridge. Cant wait till its my home grown watermelon. Im planting the huge carolina cross' this year.

My DH went out yesterday and brought home a gallon baggie full of wild asparagus! I broiled some pork steak and we had a great meal. The only thing missing was gump bread!

Does anyone else find wild asparagus? We have also had some moral mushrooms but they are about done here. Isn't living off the land satisfying?
 
I always read this thread, but have never participated. I often use y'alls ideas to help prepare my weekly menu. So last night at my house I made some fried chicken (store bought chicken legs

) with green beans sauteed with garlic and potatoes au gratin (sp?). It was delish!! Tonight will be grilled shrimp with tomato sauce and pasta with zucchini and mushrooms on the side.

I've been hoarding a last pound of ground beef (raised by my hayguy) and along with the remains of frugal's yeast cornbread for the stuffing this will be supper one night this week

Gump Bread is a fantastic bread recipe shared with us from Gumps Girl here at BYC. Do a search and see if you can find it. If not let me know, I would be happy to type it out for you. It has become a family favorite!
