Looks good! I used better than beef bouillon and chicken stock in an Asian beef ribs recipe yesterday instead of beef stock. I love that stuff!I made blanched bell peppers stuffed with a mixture of brown lentils,* brown rice, shredded cheese and cottage cheese, and a Greek salad (chopped cucumbers, chopped tomatoes, chopped green onions), dressed with olive oil, red wine vinegar, oregano, s/p.

* Lentils were seasoned w s/p, curry powder, turmeric, sage, ground ginger, chopped onion, chopped celery and Better Than Boullion chicken flavor.
I should make more things with puff pastry!Sunday I made chicken pot pie using meat from a rotisserie chicken, frozen mixed vegs, cream of mushroom and cream of chicken soup, sour cream, and puff pastry topping.

I rolled out the puff pastry and cut it into squares, then laid them on top of the filling. This made it easier to serve; I didn't have to cut through the pastry crust. Sometimes I'm so smart I scare myself. My DH calls it "cheating," lol!![]()
Making this dish (the pot pie) was pretty quick and simple. And it only took about 30-40 minutes in the oven, which gave me time to tidy the kitchen and put my feet up and relax.I should make more things with puff pastry!
I try to keep things simple on week nights-- I do not want to spend hours waiting for supper.
I think it’s a wonderful idea! Cheating??? Reminds me of the Simpsons episode where Bart said he’d found a new way to cheat on tests…. As a kid I read a little blurb in Reader's Digest that said, If you want something done quickly and efficiently, ask a lazy person to do it.
