Tonight, we had easy-to-make peta bread things. All you do is buy that peta bread, cut it in half to make two pockets, take turkey(we used Vegetarian turkey, and yes it's yummy and healthier and better for animals

) and put that into each pocket, then spread mayonnaise into it, just to layer the sides with it, and then fill with cranberry sauce.

Yes, it sounds really nasty, but trust me, it's REALLY YUMMY!!!!!

French toast with home-made crabapple syrup & plum jam, hash brown with fresh cut tomatoes ( gotta get rid of some of these dang green tomatoes!!! I simply cannot can them allll!!!!) & topped with over-easy ~fresh~ eggs, & of course, orange juice.

It's always easier to think up a breakfast dinner than a dinner dinner. :-D

~French toast goes from simple to stellar when you add a splash of vanilla, a dash of salt, & cinnamon & nutmeg to taste.

. So First thing this morning I put a whole chicken, garden fresh potatoes and onions and spices in the slow cooker. I will put bread makings in the machine just before I leave, add a salad and you got easy dinner!

Tonight will be taco salad...

We make it by layer on our plates:
Tortilla Chips
Taco Seasoned Ground Beef
Mexican Rice
Lettuce
Tomatoes
Lots of Taco Cheese
and then my favorite part... Catalina Dressing! Yum!

DH can't stand dressing over his taco salad so he chooses to put salsa on it instead.
 
well I have put a pot roast in the crockpot with little boiling onions,mushrooms and carrots from the garden.
I wasn't going to eat red meat any more but I found this in the bottom of the freezer and want to get rid of it. I would like to go vegetarian but I am weak.I might just eat the veggies I'm not fond of pot roast.
I'm not making a starch cause of the diabetes, DH will just have to deal I've lost 6 lbs and I joined curves so I'm not messing it up for a potato.

Have you ever heard of the nutri-steamer? (http://www.ultimate-weight-products.com/page/UN/PROD/stainless/H-bb-n12&QTS=froogle) Well I hadn't, until my friend got one, and she started steaming EVERYthing! It was so awesome ~ and took hardly any prep time or even watching time ~ a FANTASTIC canning product if ever there was one!

Anyway, if you use this steamer, it will get the juice out of the crabapples, without any hardly any work at all. The juice is VERY sour, however, with sugar added, it makes a HEAVENLY syrup, just cook it till it boils, let it boil for about 5 minutes, to thicken ( it won't be terribly thick unless you add karo syrup or similar, however, i don't like karo syrup, so I just used turbinado sugar, which worked very well & so would regular white sugar.) then take it off, and either can it (with a 25 minute water bath) or use it!

The syrup also makes a delicious sweet n sour sauce for your asian cooking. You can also add pectin (simply use the recipe for grape jelly, with the low sugar pectin version) & it makes a very tasty jelly. (Similar to fireweed jelly, almost.)

This steamer is so great though, I have never wanted to go to all the trouble to steam & press & sieve my rose hips, even though they are a fantastic source of Vitamin C, among other things, but with this steamer, it is a BREEZE!

I am saving up all of my rose hips and making rose hip mint jelly this year, because that steamer makes it soooo easy!

And that link is the best price for one too. I paid $150 for mine off of eBay ~ they are $200 in the store.
