Tonight will be the raviolli, foccia and salad.
Last night I cut my por chop up small an was able to eat it!!

It is snowing here!! It's only a little bit but it's supposed to continue for part of the day.

I'm going to go make cocoa.

Tandoori ...or Tikka Masala.. and basmati, palak paneer, fresh naan.

DH requested Apple Turnovers, too ..even though they don't exactly "go" with the menu ...I'll try to make those, too. So much to do, so little time...

My favorite way to use up eggs.

This time I used pork sausage meat, rolled into little balls and cooked, eggs scrambled and half cooked in micro.
meat in caserole dish, pour egg mix on top - top with fresh shredded cheese a few shakes of salt - pop in the oven at around 350 till done.
I add pepper afterwards as my kids are picky, so I get pepper they don't.

In the past I've used different kinds of meat - whatever I had on hand works.
 
I tried a new recipe...maple/dijon mustard glazed pork tenderloin. So easy to fix and everyone (my 2 boys and DH) loved it! Yay!! I served it with baked potato and broccoli/carrots/cauliflower mixed vegetables.
 
My raviolli turned out WONDERFUL!! It was the first time I have made it from scratch. I DO need a pasta machine though, rolling out the dough is the PITS!

My foccocia turned out great too!. DH doesn't reslly like bread much, he had two big wedges! I had to rise it in front of the fire becuase we had snow yesterday so it was cold.

I will surely be making these again. I can't wait to try other fillings.

Tonight will be salmon patties and baked rice, broccoli, cauliflower and carrot mix with cheese.

Aneesa's Muse - No! I must have missed that so I just searched back and found it on #3192. I've printed and can't wait to try. Can't believe how many posts we've had on this thread. I think that's great!

I've posted the sour cream chicken on this thread before, but it's so darn hard to find them again, so I'll just repost. (isn't there a way to search and find a specific post, not just the thread where the post is located? I certainly don't want to go through 330 pages!)

This is one of those dishes that I make when I need to keep my time in the kitchen limited. It's possible to prepare all of this ahead of time by refrigerating it after the pan stage is completed. Then, just pop it in your oven to finish as you're getting the rest of your dinner ready. Just add a little extra time in the oven for the recipe to heat through.

Sour Cream Chicken

1/4 - 1/2 cup butter (the original recipe called for the entire cube, but I cut mine down)
chicken breasts - cut into bite sized pieces
sliced mushrooms (optional)
salt and pepper to taste
16 ounces sour cream
Can of cream of mushroom soup. (LF is fine)

Melt the butter in a heavy saucepan. Add the chicken and brown. Remove the chicken to a baking dish, adding salt and pepper. Leave the butter and meat drippings in the pan. To the pan, add the mushrooms (if desired) and cook until tender. Add the sour cream and C of M soup, mixing well. Pour over the chicken. Cover with foil and bake at 350 degrees for 30 minutes, removing the foil for the last 5 minutes of cooking time.

I think searching for specifics throughout this thread is difficult, at best ..but if you know the username and specific words in the post ..it can be done with some diligence.
