Hey Grandpa, What's For Supper?

Last night it was a chicken casserole using an extra roo. Browned the pieces, and set them in a bed of cream of chicken and cream of muchroom soup, with chopped zucchini and potatoes with onions, baked for an hour at 350. That was a tasty roo.

Tonight it's a skinless rouen duckling. I have no idea how to cook it yet, DH wanted roast duck but he had to skin it since it was full of pinfeathers. I couldn't find an oven bag anywhere (so what? they only sell them at Thanksgiving?!!) so I am in a desperate on-line search for recipes.

We had pot roast, roasted potatoes, carrots, celery and onions with gravy. Fresh apple slices and pears! Yummy!

Served all 14 of us tonight...kinda nice and now they are all cleaning up while I hide

The duck came out great! I sauteed the breasts and leg/thigh quarters in butter and onions, and make a sauce with raspberry and apricot preserves and honey BBQ sauce. DH was in heaven.

The canoli cake went over well, too.

"Santa-Fe" burgers (burger, Colby-Jack cheese, spicy ranch dressing put between slices of grilled sourdough bread) tonight, garnished with a tomato slice on leaf lettuce and a dill pickle spear, served in a plastic basket lined with a waxed paper square with potato chips.

Easy for me, little clean up, and my football obsessed family consumed something fairly healthy and balanced. Veggie tray and pretzels for snacks.
 
Made a lasagna tonight, and was really proud, because it contained:

Fresh organic spinach
My own homemade ricotta cheese
My own homemade mozzarella cheese
My own tomato sauce
Venison sausage that my husband hunted
My OWN farm-fresh eggs!

It REALLY felt like a "homecooked" meal!
 
Wow! Everyones meals last night sounded fantastic! The chicken casserole and Sante Fe burgers made me hungry! I have never had duck. My son had some on a cruise with his Dad. He is always after me to try some. I will some day.

Ninjapoodles- You deserve to be proud of that lasagna! I would be too.

I have to admit to being lazy yesterday. Hubby BBQ d steak. The side dish was a package of wild rice. The veggie was fresh green beans with bacon. Hubby had never had them that way. He looked at me like I had lost my marbles, again!! He really liked it though. Makes sense right? Take a perfectly healthy veggie and add bacon!!

and here is the recipe itself. I made my own pound cake, it was cheaper than one of those frozen ones, and everyone here has access to eggs and water, right?

Since it uses a 9 x 5 inch pan the cake is a bit bigger than those frozen store bought ones so you have to spread the filling a little thinner. But it still is tasty.

(Interesting, my copy did not mention butter, so I didn't use it, probably would have helped keeping the frosting from hardening so quickly!)

Holy Cannoli Cake

Prep Time: 10 min
Total Time: 10 min
Makes: 12 servings

What You Need

1 cup milk
1/2 tsp. orange extract
1 pkg. (4-serving size) JELL-O Vanilla Flavor Instant Pudding
1/2 cup POLLY-O Original Ricotta Cheese
1 pkg. (8 squares) BAKER'S Semi-Sweet Chocolate, chopped, divided
1 Tbsp. butter
1 pkg. (10.75 oz.) pound cake, cut horizontally into 4 slices
1 cup thawed COOL WHIP Whipped Topping

POUR milk and orange extract into large bowl. Add dry pudding mix. Beat with wire whisk 2 min. or until well blended. Add ricotta cheese and half of the chocolate; mix well.

PLACE bottom cake slice on serving plate; spread with one third of the pudding mixture. Repeat layers twice, ending with top cake slice.

MICROWAVE remaining chocolate and butter in small microwaveable bowl on HIGH 45 sec. to 1 min. or until almost melted; stir until chocolate is completely melted. Add whipped topping; stir with wire whisk until well blended. Spread evenly over top and sides of cake. Store in refrigerator.
 
We just got back from our short(camping) vacation too...while there we had breakfast on the fire...bacon cooked in a cast iron skillet (

), fried potatoes, and eggs, also cooked on cast iron skillet (there's just no other way!

), another night we had traditional weenie roast with hot cocoa heated on the fire and roasted marshmallows, apple slices fried in butter in that good ol' cast iron skillet Oh boy, oh boy, I want to go back!!! Expected to lose weight while on vacation but actually gained two pounds.:| The fire and cast iron skillet just do something for bacon that you can't do any other way...

So i tried the teriyaki sauce, and all i can say is YUMM. It was freakin awesome! The only thing i did differently was i put pineapple chunks in with my chicken while it cooked.. I have my own recipe for fried rice, but omg i will use that teryaki sauce recipe again!!!

I made a Spanish frittata for us tonight, sliced onions and potatoes, sauteed in butter and olive oil, added beaten eggs, and then topped with sliced tomatoes before running under the broiler to finish it off.

thechickenchick, my DH never knew the joy of eating green beans cooked with bacon either!
