Welcome Nix. I have extremes in my cold winter and hot summers here also.
My breeds are Australorp, Rhode Island Red, and Red Sex Link. Heavier breeds do better in winter. Mine do fine in winter, better than you would think. Don't overcrowd them as there will be days they can't go outside. The other day here wind chill was
- 18! They wouldn't go outside at all.
Coop got down to 17 but they did fine. Frozen water is a challenge
(there are some nice heated waterers out there)
6 is a great number to start with. Manageable and not too small
Hens do fine without a rooster.
I chose to skip the roo as mine don't free range, and they're too noisy with close neighbors.! I actually read an article where hens laid better once rooster was gone.
Definitely read the posts in article section and if any questions these other folks on here know SO much.
