Oh great, now I got a hankering for a slice of hot homemade bread! DH is gonna be so upset about having to eat hot, crusty french bread fresh from the oven with supper tonight!

BTW, he can eat a loaf by himself if he puts his mind to it.

I don't put the egg wash on mine, so it never looks that nice! Is that a basic white ( contains egg) or a French - just flour, water, yeast, salt.

OK, so here is my French bread recipe.( I used a bread machine to knead it but you can knead by hand too.)

Add the ingredients in this order at room temp.

1 cup + 2 tablespoons of water
1 teaspoon salt
2 teaspoons granulated sugar
3 cups bread flour (i used self rising)
2 teaspoons active dry yeast.

AFTER KNEADING..

  • Place dough on a lightly floured surface and let it rest for 5 minutes.
  • Cut the dough into halves and roll each portion in to a baguette shape and place in trough of a lightly greased , double-sided baguette pan ( i just used a cookie sheet!)
  • Glaze each baguette with egg white (thats where your chickens come in). Slash 5 times diagonally with a very sharp knife. Place in a warm, draft free area to rise until its doubled in size, about 45 to 60 minutes.
  • Glaze unslashed areas again with egg white and bake at 400 degrees F for 25 to 30 minutes until deep brown.

There ya go!

I had to buy bread yesterday because it's too hot to run the oven and I don't have a bread machine. Yuck. Haven't bought bread in 3 months. Toasted isn't too bad, but I need to bake a bunch and freeze next time the temps are lowered some.
