homemade egg noodles

I usually use flour, touch of salt and duck eggs. They are really good.

I have a neighbor who kept begging duck eggs off of me and finally I asked why only duck... she told me her husband will only eat the noodles if she uses duck...lol

ColoradoChick, I'm right there with you! My Grandma made the best homemade noodles to go in her big ol' stewed chicken pot!! Yum. I really miss making them with her.

Here's her "recipe"

Put some flour on the breadboard - a couple of cups or so
sprinkle on some salt
crack an egg into it and start working it with your fingers, add more eggs as needed until it "the right consistency"
let it rest for a few minutes
roll it out
slice it into noodles
separate them out so they can dry
after a few hours dump them into the pot with the stewing chicken and let them cook until they're tender.


Oh man, now I have to go buy a chicken so I can make this over the weekend!!! (I haven't been able to bring myself to butcher my own birds yet - maybe someday?)
 
Yup, just used duck eggs, flour, salt, and some itallian seasoning. Was going to try the other recipe, but was out of milk.

Coyotemagic, you should be able to use ww flour. I would think you might need to use a little bit of regular flour in the mix, but I'm sure the ww will make great noodles. You will probably need a little extra liquid with ww because it soaks up more??
 
I make whole wheat noodles all the time. You may need a little extra liquid, but that's it. I use a ratio of 1 cup flour for every 2 eggs, which works just fine. I don't usually season my noodles, I like to rely on the sauce for flavor.
