Homemade GUMP Bread - best I've found! **New pics added on pg. 5**

Quote:
Bread flour is different from regular flour because it is higher in gluten, which makes it better to make bread with. If you use regular flour, you might get a different consistency and it might not raise as high. That would be the difference there.

As for making your own yeast, I don't know of any way to do that. It is something that you have to buy dry and add. You can "catch" a yeast in a sour-dough bread starter, but it would have to sit and ferment. Then you get the "sour" taste in the bread.

Hope this answers your questions.

If I had not made the bread bowls the pans would have overflowed since I use 8" pans instead of the larger ones.

Hey where do you get long bread pans? I have never seen any. I use just a regular rectangle pan that is used for quick breads too. But where do you find long pans to make loaves that look store baught?
Pan envy here!

All your Italian loaf style loaves are made by rolling them out and baking them like that. check out the first pics here.

Ozark Hen, that is a beautiful loaf! (and what is a bread bowl??). I find it odd that 4 cups of flour makes only one loaf with the recipe I used with my bread machine, but this recipe with 5 cups makes 2 loaves. But Im not complaining! This is a great recipe, it really is. Think Ill try some whole wheat loaves in a bit. Thanks for sharing, this recipe might be one of the most popular at BYC!

jumpin on the band wagon here! I made this last night, was my first loaf of white bread ever . . . it came out perfect, just like the pictures. I can't believe how good it was or how fast it was to make compared to wheat bread, that flour really makes a difference.. Thank you to the poster!

Interesting! What about the texture? Is it as dense or more airy and light?
