Homemade Jelly and Jams

4 cups grape juice
4 1/2 cups sugar
1 box of powdered pectin

combine grape juice and pectin bring to a rolling boil add sugar bring back to a rolling boil and let boil exactly for 1 minute. skim off foam put in jelly jars screw on lid and ring invert jars for 5 minutes.

I used some very sour grapes this time and it was not sour at all. last batch was concords. this is the easiest jelly I have ever made. takes about a total of 15 min. from kettle to jars if even that amount of time
 
I tried this and it is fantastic, everyone wants me to give them some. It is very easy to make. It is more like a Banana Butter type. And the great thing is you can make it any time of the year, whenever you find bananas on sale.

Banana Nut Bread Jam
10 ripe bananas, pureed (need 3 cups)
1 tablespoon lemon juice
4 cups granulated sugar
1/2 cup brown sugar
1 1/2 cups toasted walnuts, minced
1 box pectin
1 teaspoon cinnamon
1/2 teaspoon nutmeg, optional
Mix bananas, walnuts, lemon juice and powdered pectin in large kettle.
Stir while bringing to a full rolling boil. All at once add sugars.
Stirring continuously, heat until full rolling boil.
Continue to heat 1 minute.
Fill jars to 1/4 inch of top seat with two-part lid and ring.
Boiling water bath for 10 minutes.
Makes about 3 pints.


I haven't tried this one yet, but it sounds good.

Mexicalli Jelly (Jalepeno or Hot Pepper Jelly)
Yields 5 Cups

Uses any hot chilies and peppers.

1/2 cup fresh hot chilies (seeded, ground) (about 1/2 lb. makes this amount)
1/2 cup sweet bell peppers (seeded and stemmed -- 2 medium peppers makes this amount)
1 1/2 cups cider vinegar
5 cups sugar
2 pouches liquid pectin

Grind chilies and bell peppers. Combine chilies, bell peppers and vinegar in pan. Bring to boil and simmer 15 minutes. Strain through cloth (see page 1). Do not squeeze out liquid, let drip to get a clear liquid.

Add sugar to strained liquid. Stirring constantly, bring to boil over high heat for 1 minute. Remove from heat and stir in pectin. Skim if necessary. Pour amber-colored jelly into sterile jars, leaving 1/8" headspace. Wipe jar rims, adjust lids and rings. Water bath 5 minutes.

I just made pear honey this week
8 cups pears quartered and peeled
3 cups sugar
optional cinamon, nutmeg or ginger to taste
I put mine in a crock pot and cooked on low about 8 hours
puried in blender ( before putting in blender take off some of the juice if you want it thicker )( I saved juice for pancakes/waffles)
ladle into jars and process in hot water bath for 10 mins

Here is my signature jelly that my family and friends can not get enough of. It is NOT hot just has a really nice balance between hot and sweet.

Apricot Pepper Jelly

1 cup red bell pepper strips
2 cups cider vinegar
1/3 cup jalapeno peppers, rinsed; stems & seeds removed*
1 1/4 cups (6 oz bag) dried apricot halves, finely slivered
6 cups sugar
1 pouch (3 oz) liquid pectin
5 drops red food color (optional - I don't use)
*If fresh are not available, 1/2 cup drained canned (or bottled) whole jalapeno peppers, rinsed, stem & seeds removed.

Directions

Combine pepper strips, vinegar & jalapeno peppers in an electric blender. Process stop-and-go fashion until somewhat ground, but small chunks remain. Combine with apricot strips & sugar in saucepan; bring to a boil. Boil 5 minutes. Remove from heat; skim off any foam. Cool 2 minutes, then mix in pectin & food color (if using). Pour into sterilized jars & fasten lids. Process in boiling water bath for 15 minutes. Cool.

Sandee that looks AWESOME!! I just froze a bunch of salsa peppers out of my garden & was thinking of some kind of pepper jelly recipe that would be a little different--I think I'll try some of them w/your recipe!

I make mayhaw and muscadine every year to give away at Christmas. I usually make plum too, but our plums did not make enough this year to bother with them. Sometimes I also do "mock strawberry" fig jam.

Mock Strawberry Fig Jam

3 c. fresh, peeled figs (mashed slightly)
2 c. sugar
2 (3 oz.) pkg. strawberry Jello
1/2 c. water
1/2 slice lemon
5 (8 oz.) jars

Mix all ingredients in large pot. Cook on high heat until mixture comes to rolling boil. Cook on medium heat 20 minutes or until thick, stirring occasionally. Pour into sterilized hot jars and seal.

I also have doubled this recipe without a problem.

You know, if you don't have time to deal w/your figs right now, place them on cookie sheets & freeze them overnight in the freezer, put them in ziploc bags & they will keep a few weeks until you can process them.
