the 5 gallon water.... why cant the buket be right side up with the lid on top, all the ones i see are turned upside down?

They can be right side up. Don't ask me why people turn 'em. Just put your finger over the hole if the water spills out faster than it fills. My water pressure is good so I don't lose much water during filling.

Mine is right side up and I just fill it outside so that when it overflows it is out in the grass then snap on the lid and wait for it to correct itself and put it back in the coop..

Mostly because the lids do not seal well and don't last very well. By turning it upside down the preasure is greater and less chance of any problems.
