So it took me three days to read through this entire thread... And I'm so excited to make things!!! I have 2 quarts of vanilla/honey yogurt going now. One I just took out and it looked set (not hard set, a bit runny but not liquid type runny. That one got 5 hours in the cooler. It had a lot of liquid around the edges of the jar (think yogurt mass surrounded by whey, inside a jar), so I decided it would be a GREAT idea to drain it by popping out the lid, and screwing the band back on over a piece of cheesecloth folded over 3 or 4 times. BAD idea. Neither I nor hubby can get the darn thing off, because the cloth sucked up a bunch of whey and is now too poofed up to let the jar be opened. So, I cut a hole in the cloth, dumped it into another jar, and am leaving it alone for the night. So much for my smart ideas! I have the other quart still in the cooler for another couple hours, just to see which comes out better.
Thank you everyone for making this thread such an awesome read! After the yogurt, I'm going to try the yogurt cheese. At first, hubby laughed at me, but he's seen that it actually appears to be yogurt, and is now skeptically impressed. I hope it tastes good in the morning! I'm going to do a batch of Lactaid yogurt too, my 7 year old is lactose intolerant and has not had his beloved yogurt in a couple years. He tolerates the 99% lactose free ice cream Breyer's makes, so I think the two teaspoons of starter yogurt will be fine. He will be SO excited to have yogurt again. He's autistic, so while he is 7, cognitively he is closer to 2 and he is constantly upset about not having yogurt, especially at school where it is served in the cafeteria. If he tolerates this, our issue will be solved!!! Cross your assorted fingers, toes, legs, eyes...
