Thanks for the info on sweet potatoes. I've wanted to try them, but didn't know the procedure. For some reason my kiddos only eat canned sweet potatoes. When I buy fresh, they turn up their noses. Mmaybe I can split the difference and can them myself.

No problem! I love that you can let them sit around until you are ready for them lol. Plus canning then makes for a faster dinner for sure!

Most of my property is wooded also, but you'll be amazed with what you can do on a small piece of land. Great to hear about your veggie garden. What veggies did you grow? We just built 4 raised gardens for next year's veggies, and I am shopping for organic seeds and sets.

Great dinner tonight. We had an organic roast chicken, cauliflower "mashed potatoes" with roasted garlic, and organic asparagus! I am NOT a cauliflower person, but this recipe was great. It was delish!
This was my first year so I had yellow squash (had to store most of it because we couldn't eat it fast enough), zucchini (yummy zucchini bread), cucumbers (my bff stole most of them), okra (holy okra! Had to let them go. WAYYY too much okra for us to eat. Lesson learned), and very unsuccessful tomatoes. My chickens ended up pecking at any tomatoes that turned red, so again, lesson learned!
 
Did you know HFCS is totally banned in Europe due to health concerns?? Not to mention that most corn in the US is now apparently GMO stock

Yep! Actually, I didn't really know much about it until I was diagnosed. I've been sick for 27 years, every day my stomach pains got worse and worse. Finally got talked into the fructose test, and VOILA! I'm healed! lol I started researching and found SOOO much about the foods we eat now. Pesticides, HFCS, aspartame (don't even get me started on that one!), etc, etc, etc! We are being fed poison on a daily basis!

Try Canning your okra! my hubby loves Canned tomato and okra. You can also freeze and dehydrate it really well. I use the dehydrated okra in gumbo. I haven't found a good way to Can squash! Anyone have a good recipes? My grandma used to make squash relish but i don't have her recipe. :( Just fence your tomatoes they are chicken magnets! I love them why not chickens! ;)

Just fence your tomatoes they are chicken magnets! I love them why not chickens!

I blanched and froze my huge surplus of okra. I bought three plants and those buggers put out so many every day! lol

Okra can be frozen and you can also use it in soups that can be canned or frozen. Canning is not hard if you follow the directions and pay attention. (don't leave things unattended).

Most folks only know zucchini bread but zucchine can be shredded and frozen too. Also I have a recipe for Zucchini Orange Marmalade. Uses four cups of lightly packed Zucchini.

Also have Zucchini green bean chutney, Sweet Zucchini Relish, Yellow Squash and tomato chutney. Point being you will want to try different recipes.

DW made Pigs in a blanket with tomatoes I put up and froze some for later use. Though there are many things that can be canned.

I hope to get a small generator just for the freezer and sump pump for when the power goes out and will be out for an extended period.

Preserve it! bottled fruits jams & jellies, pickles , cured meats.

Now remember you might be able to trade or sell you extra produce.
