how big do quail get?
what it is the smallest?
The largest are probably Jumbo Cortunix at about 1lb...or Mountain Quail. Smallest are Button Quail.
what is the simplest way to house them?
There are many ways. I have a 8ft by 3ft above ground pen that will house 24-25 birds. If I may offer a word of advice the best thing to do is get a book on raising and breeding gamebirds...and also join a gamebird forum. Thats So Quail Place is a great forum.

I know a little about pheasants.

i made a cardboard brooder they work fine
then just make a small chicken coop with atleast 1 inch wire
