quail in rabbit hutch how to get eggs

so I'm new to Quail. growing up I had chickens outdoors which were easy to collect eggs from but I just started my first quail and they are a week away from going in the hutch. they are so jumpy and flighty I'm worried how I can get my eggs without them getting free?
 
I use rabbit cages for my quail. They will calm down the more you stick your hands in their cages. Do it multiple times a day for no reason.

They don’t like hats either, fine with me, put on hat and the sky is falling! Chicken little was actually a quail. I use a fire poker with a ninety degree bend at the tip to roll them from the back of the three foot deep pens, birds jump over it, peck at it, stand on it, stand on eggs or otherwise get in the way, they’ll chill out pretty quick. I was cleaning the garage today and they were freaking out, forgot my daughter was out there, silly things!

Oh, I once wore a bright orange fox kigurumi to feed the quail on Hallowe'en one day. They flipped out.
