How can I tell if my hen is eating her eggs?

I have 3 Sapphire gems. one has been laying since she was 17 weeks (Dec.22nd). One of the other two laid an egg back on Christmas eve, but the shell had a hole in it( either pecked or stepped on as it was laid during the night) and had not laid again until Monday (Jan.11th)< this time the other one laid as well. Both shells were very soft and one again had a hole in it (I did give a calcium +D supplement to both). Today My girl went up to the nesting boxes to lay and after a couple hours I went to check on her as she seems to get VERY stressed out when she goes to lay. I only found a very small amount of yolk in the nesting box that she was in. Could she be eating her eggs? and what else can I do for her. I checked her vent... it is tight and dry (does not look like the vent of the girl that has been laying since Dec.22nd) I have free choice oyster shells out for them, and they get a whole grain organic grower feed ( I just ordered layer feed as everywhere I read you are not supposed to give layer feed until they are laying?) I supplement their greens as they can't free range most days. please advise :confused:
