How come people don't know what they have?

We purchased our chicks from a farm supply company and it was a minimum of 25 purchase but they were not listed by breed so we picked the ones that looked good, some white, some black, some brown. Only one of the three white chicks ended up being a white leghorn rooster, the other are Buff Orpington hens (I think). I believe many of us just starting out to raise chickens, don't have the experience of knowing which breed/strain is which. There are so many out there and the chicks change a lot as they grow. I love them all the same...well actually, I do have my favorites -the Buff Orpington hens are by far the friendliest and most affectionate.
 
Ours came from a backyard breeder who apparently had no clue what he had. They turned out quite different than expected, so I have been super grateful to have so many experienced folks be able to give me suggestions or clues!
