How do I change the little thing that says "crowing" under my username?

You can get your username changed by an admin like DuckLady and the Crowing thing will be replaced with "Previously 'Username'" But I Don't know if it is permanent because I just got my username changed.

The previously title isn't permanent, it automatically reverts after a while.
