how do I check eggs for fertility?

Look for a "bullseye" on the yolk. There are some really great pictures in the Incubating and Hatching Eggs section of what to look for.
 
You can also throw some in the incubator and see what hatches. I don't candle turkey eggs until 10 days because they develope slower than chickens!

I candled the eggs I put in my incubator on March 9. I can see a embryo with spider veins the size of a bottle cap in all of them. I have no problem candling at 4 days.
