My roo is doing his job? I have caught him a time or two but have seen nothing lately, he is a Cochin and good size, I have 2 Cochin hens a RIR, Buff Orp and 2 Aracaunas. I would like to incubate some eggs, but wondering if I should buy some hatching eggs for my first go around?
I am getting regular eggs from all but the cochin hens, they are still infrequent I think due to our weird weather , freezing and snow one day 70 the next.

The only 100% way to know is set a dozen or so of your own eggs in the bator and candle a week later. That will give you an idea of your fertility rate.
