how do i save the giblets?

I have been selling my cornish cross chickens like crazy! i started with 25 two lost the first week and once I butcher and another guy takes his live i am sold out. I had an elderly lady up the road show me how.

anyway one of my customers wants the giblets. I know how to do the gizard and neck. what else are included in the giblets and how to i salvage them?


Also the first one i ate was the same day as I dressed it. it was a little tough but delicious! I read something that said it needs to sit for a couple days to relax. IS this true??

I leave mine in water is this necessary?

Gizzard, heart, and liver. YUM!!! I'm not such a fan of the gizzard, but I'll take the heart and liver any day! They detach pretty easily with a little tug. Very easy.

I would let the meat fibers relax a few days before eating. Also, you can let the meat rest for 15 minutes after cooking, to allow it to reabsorb juice.
 
Well, not just a tug on the liver. Be careful when scooping the guts out so you don't crush the liver and as you remove the liver you also have to carefully remove the gall bladder. Carefully!
