How do I tell if my goat is in heat??

If you have more than one, you will often see them mounting/being mounted by another goat. Even if you don't have other goats, you will hear them bleating - a lot! My goats tend to greet me any time they see me anyway, but when one was in heat, they really screamed. I can't count the number of times my husband went out on the porch and poked his head back in the back door to inform me, "someone is murdering Esme again." They often show an unusual amount of interest in anyone male that comes close to them - testosterone is testosterone, regardless of species; it didn't mean that they thought my husband was as smelly as a buck!

Also, a goat in season produces some mucous from her vulva - it won't be dripping or all gooey, but it will cause the hairs on the sides of her tail to be slightly clumped together.
 
There are plenty of articles easily found by Google search describing the numerous signs of heat. The big ones are being vocal and seeking the buck. I see a lot of mounting, other does mounting the doe who is in heat. They flag their tails constantly, too. Some does do have silent heats and are very hard to detect.

So, symptoms depend on your individual does.
