how do they stop leying?

so when they go broody they obviously stop laying to hatch and care for their babies.
they stop laying when they molt because they need to produce new feathers and not eggs.
so when they are happy they lay. its a natural proces , they eat , drink , sleep and lay an egg.
SO how do they stop laying ? if they dont like a new feed , a new hen or a new rooster or you keep them in the run an extra day befor free ranging. How do they make themselves stop laying? when they go "on strike " why and how , do they know they are going to stop laying and why?
why one day ,wait several day then lay consitantly , stop , start and so on?then others are cosistant. and how does a whol flock stop laying at the same time?

I'm going to go the easy route and answer "hormones." Since human hormones are affected by stress or sudden changes in diet, etc. it makes sense that any other animal would be similarly affected.
