How do we manage to get into these situations? Collected another "Slightly Damaged Stray"...

Quite literally.

How wonderful! Think about trying to find an experienced rider in FL to ride him for you occasionally to keep him tuned up, or get someone to give you riding lessons on him. It is so easy for a beginner rider to spoil a horse without even knowing you're doing it. Little things, like letting him eat while you are on him, or with a bit in his mouth seems innocent enough, but makes for a frustrating trail ride when the horse snatches the reins out of your hands every other step to grab a mouthful of grass. It is going to be a awesome adventure for you and Gus and I know you are going to LOVE being a horsewoman!
