How do you cook ELK steaks?

I would try the pan method with oven finish...

"Preheat oven to 425°F. Moisten the meat with 1 Tablespoon oil, then dredge each steak in the cracked pepper. Heat the remaining oil in a skillet over high heat. Add 4 Tablespoons butter. Add the steaks and cook on all sides for 5 minutes. Finish in the oven, about 5 to 7 minutes for rare and 10 minutes for medium-rare. Remove pan from oven and let rest."

Anthony Bourdain method
 
I've tried this method on beef steaks and it's great. Elk to me tastes more like beef than deer.
