If you've had pigs, you know what I mean!! A pigs trotter just seems to cut into my foot/boot like no other animal can!
I do have some scales I can run mine across. Invariably, though, it's just to confirm that I again raised them too large and I've made my pricing screwy. But, I sell all USDA inspected by-the-cut pork, so being too large isn't a bad thing.
