Yeah, I just dont feel like I could trust them. Surely chickens can not live 3 weeks without humans right?

I would hire them for a couple of weekends first, to make sure they are trustworthy. If that is no bueno, I guess you will have to load of the coop with plenty of food and water and hope for best.

Could you install a camera before you leave? Are your feeders and waters big enough for at least three weeks? Maybe put enough food and water for three weeks and then hire someone and watch from the camera. If they end up not doing good then at least you know they have enough food and water and you can check on them from the camera. And I think if the person that watched them for you knew about the camera that would make them more likely to do it properly.
