How do you know if your bird has salmonella or ecoli?

How do you know if your bird has salmonella or ecoli even if it looks healthy, has no loss of appetite, feathers are normal, weight is normal, poop is solid, etc? I am asking this because someone told me that I shouldn’t kiss or pet a poultry bird or else I will get sick.
