I'm the only one so far who cooks them "steam-basted"? I never heard that term before, but that is how I cook them here.

I was taught that it is easier to add water and cover to cook the whitse than flip them like traditional over-easy. Hubby likes them that way now too. I thought it was more common.

We also do the more common scrambled, omelets, hard-boiled, fried, deviled, etc. :-) That's why we got chickens!

Over-easy: cooked on one side, then turned for a second if I'm cooking them. Eating out I almost always ask for scrambled as its harder to screw up

Omlets can be wonderful, but I also usually prefer my own over eating out. Gave up eating them raw in the eighties

I'll eat 'em pretty much any way as long as the white is fully cooked. Slimy whites gross out me and DH. I picked over medium though because that's how I usually make them. I can only do basted if I've fried bacon first which I don't have often. Omelets and scrambled and an occasional poached (full bore with Hollandaise, etc) are my other mainstays.

Oh and hardboiled for salads.

Then there's quiche but that's much more involved.

I had to have an egg for breakfast too, after reading this thread! I was going to have cereal, but noooooooo, this thread has to great me first thing this morning!

You whip the milk into the eggs before you dump it all in the pan. Some people use water. Some don't add any liquid. Can't over cook though because it just boils the liquid back out.
