How Do You Maintain Pre-Incubation Temps in Florida?

Condensation here would fill almost anything with a few inches water overnight.
In boyscouts they tought us a way to get water by digging a small hole and putting a plastic in and over the hole to collect condensation.

Yeah we hit water only a few feet down here in Fl.

You ain't kidding! I live off of S.R. 31 and in the summer I can't go down more than 3-5 inches once I get away from the area around the house.

SWAMP THE SAND WE HAVE HERE HEATS UP AND COOLS DOWN FASTER THAN SAY A DENSE CLAY WOULD. SO A DENSE CLAY WILL STAY AT A MORE EVEN TEMPERATURE... IT WOULDNT GET TOO HOT IN THERE DURING THE AFTERNOON HEAT LIKE OUR SUGAR SOFT SAND WOULD...

Ah, I think you mean that (wet)clay actually has better temperature conductivity, not that it resists temperature change because it is more insulating. It conducts heat better because it is denser and does not have the air pockets sand does. Because of this it can dissipate energy to the surrounding areas faster. Don't mean to nit pick, I'm a potter, and all things clay get my attention in a hurry. It's an occupational hazard.

Wife always laughs at me because I'm always sticking my fingers into mugs and cups at restaurants to check wall thickness etc. even though it looks just like the 30,000 other mugs that came out of the factory. I don't even think about it. BTW I agree all things being equal I'd put things into a clay soil to keep them cool too, provided it was cool to start with.
