How do you process a chicken?

I finished up my cornish X today,I tried the pruning shears but didn,t like the results,,so I tried using a machete,its light and sharp and with the long blade you get good balance,it didn,t take as much of a swing to completely remove the head,it was clean and quick,I am thinking that may be the best method for me,and I am very pleased with the way my birds turned out,,at seven weeks they were bigger than any bird in the supermarket,the skin was yellow and the meat looked great,soon as they finish up in the salt and brown sugar brine I will enjoy roasted chicken,I am very satisfied with the results I got ,I was having second thoughts about using the cornishX for meat birds because of a lot of differences in opinion,but from my own experience with the cornish, thats the only way to go if you want meat birds without waiting several months,,,
