How long should carcasses rest?

Got it. I’m thinking I’ll put them in the freezer Wednesday evening. Although I want to eat one this Thursday so maybe I’ll just keep them in the fridge.
How will you cook it?
Are they whole or butchered into parts?

Thank you! They are whole. I think I will cut one up into parts and bread it and cook it in the oven covered on a low temperature. The other one I plan to cook whole with vegetables covered in the oven on a low setting.
