I was curious to see how long a summer squash would last into the winter sitting on the counter. I took a 18 inch Zucchini from the garden at the end of the year and let it set on the counter until today. We sliced it up into 1 inch thick "steaks" sprinkled them with herbs, olive oil, and cheese and broiled them in the oven. Not bad!
