A metal roof is generally attached to purlins which should be attached to rafters but with the span on the coop, you may just have purlins, maybe made from 2x4. I'd have to see the ceiling of the coop to see the framing of the roof.The roof is corregated steel. Whats wrong with not having good ventilation? I know that it needs it and am not disagreeing but wondering.
And of I remove the board do I replace it with the corregated wire?

To extend the overhangs you would need to sister the rafters and get another sheet of roofing with the same profile and more metal roofing screws.
