A co-worker today said she uses a steamer to steam the eggs with and she's able to peel fresh eggs completely without messing them up. She said she put a dozen in the steamer on a special rack with depressions for dim sum dumplings or something another and steamed them for 14 minutes. Then she said they went under cold tap water for a few minutes to cool then stand for a few more minutes before cracking and peeling. She said they came out perfect. The eggs were from late last week that I sold her. I'm going to try some tonight in our rice steamer and let everyone know if it works.
