It really may depend on what breed of goose. For example I talked to an old man one time who was an avid goose hunter, and I asked him about what a snow goose tastes like, he said you have to cook it right, by boiling it in a pot, using very good seasoning, cooking to perfection. Then he said the last step is to "throw out the goose and eat the pot" and I did believe him. So I never tried snow goose. I did kill a canadian goose while duck hunting several years ago. To me it had a strong game taste and was low in fat content so was dry. I baked it like a turkey. I didn't like it and I promise I'm not picky at ALL I'm actually a very adventurous eater. Since the goose I tried wasn't good I haven't tried any since.
But I'm sure farm raised geese would taste much better, higher fat content and breeds that have probably been bred for eating.

3. Rattle Snake
4. Chicken parts that aren't normally eaten
5. Sea Cucumber
6. Elk
7. Dozens of duck breeds
8. Deer, quail, wild turkey, raccoon, squirrel, wild rabbit.
9. Grass carp, drum fish, buffalo fish, eel, whole dried fish chips.
10. Grass hoppers.
11. Frog legs
12. Alligator
13. Turtle
14. White tail deer, buffalo.
15. Wild boar
