How many rabbits do you consume per year?

Quote:
Yes we do raise them, we raise Silver Fox and a Cal/NZ cross. The rabbits are a win win for us, we sell 1/2 to 3/4 of the litters which pays for their feed and then some and freezer the rest. The SF has a better meat to bone ratio than our cross and they have a better "pet" appeal so they sell better.

One of the best things about cooking domesticated rabbit is they have a very mild flavor and tend to take the flavor of what you are cooking with them. The last one we cooked was cut up and cooked in a dutch oven with fresh mushrooms. The meat had a nice mushroom taste and the gravy was so good.

Other than pork (because we haven't finshed the pig pen yet) we buy zero meat from the store. One of the reasons we have the variety we do is for eating. With duck, turkey, chicken, rabbit, quail, pheasant, venision and a big garden it's one stop shopping from the back yard.

Our current rate of consumption is ZERO.

That is going to change this year. We are looking for breeding stock now.

I would guess that our total combined rate of consumption will be what I eat, as everyone else will be all upset about the whole rabbit enterprise.

Oh well, I like rabbit.
