How many times a day to turn these types of eggs?

In our three incubators, we have:
12 Quail eggs
3 Doves (Thanks to the feedstore)
2 Guineas
2 Pheasants
3 Turkey
4 Duck
1 Goose
2 Peafowl (Trying to hatch for breeder without incubator- not our eggs)
And going to get an Ostrich egg soon (Again, won't be ours but we WANT it to hatch)

We bought most through Craigslist this past week and now want to hatch them. But how many times do we turn each type of egg per day? Does it matter?
Also, any more tips besides that? We've only successfully hatched quail and some bantams before this, but never anything exotic!

I'm pretty sure all eggs should be turned either 3 or 5 times a day, to keep the embryo from sticking to the shell. Don't turn an even number, just odd. Hope that helps
