I know of a poulty butchery called Martin's chicken processing I believe. Its outside of a small town called Fouracre, close to New Paris Indiana. We had them do turkeys for us last year and thought they did a good job and reasonably priced. Plan on having them process meat chickens and turkeys again this year.

Killing cones are to hold the bird secure while it's sliced & keep it from flapping & splashing while it bleeds. I wrap some duct tape around their middles, and hang them from their zip-tied legs.

I have a nice big stock pot I use for scalding the birds. It sits on a wire milk crate (you could also use blocks). I have 2 other smaller stock pots I use to boil water on the stove. When it's time I (or my trusty teen helper) brings one of the pots outside & pours it into my biggest pot. I can add water from the hose if it needs to be cooler (I use a meat thermometer to gauge the temp). Then the smaller pot 00 which is still clean -- can be refilled & put back on the stove, if I think I'll be needing more boiling water.

So you don't *have* to go through the trouble & expense to construct processing equipment, unless of course you WANT to. Then by all means, don't let me stop your fun! Or your good excuses for not yet butchering at home!
