How much loss could I expect?

I was reading about quail the other night the author of the article seemed to think that losing about 4-7% from the bator to thru brooder was acceptable /low most of the hatcherys (chickens) I have comtemplated ordering from look like they include about 5% extra ,packing peanuts if you will.
