How often do turkeys lay eggs & what to do with the eggs?

Hey there again! So how often will my new turkeys lay? Just got them yesterday. And someone told me before that turkey eggs do not scramble well. Is that true? I did get 1 egg yesterday, nothing today. It is so big and pretty, still have it on the counter, don't wanta crack it till I know what I am gonna do with it!

I have a broad breasted white that I kept on a whim because it escaped the poultry house😵‍💫. She is now 18 months old. She is giving me 4 to 6 eggs a week since mid March ( I'm in central VA.) In my opinion the turkey egg has a milder taste than a chicken egg and the yolks are delicious. As far as scrambling them, they do well, you just have to beat them longer. The yolks are very sturdy!
 
normally turkeys will lay eggs for a couple of weeks. they usually will not lay year round like chickens do.
my wife tried making an angel food cake with turkey eggs. also with goose eggs. it did not go well.
to lighten scrambled eggs, add water or milk to them while whipping..

I got 2 eggs yesterday and don't know what to do either

when i had a lot of turkeys, i couldn't keep up with the eggs. finally i had dozens of them in the fridge
I finally scrambled about six at a time in my iron frying pan. i had a stack of about ten .
i fed them to the chickens . one a day.
]turkeys will lay about one egg per day. if you do not collect them, they will stop at about 12 eggs and start to set on them. baby turkeys are some of the prettiest things .
i had Royal Palm turkeys. very docile birds.

Turkeys are seasonal layers that lay from spring to fall if their eggs are collected. Individual turkeys lay at different rates. Some lay one egg every other day, some two days in a row, some three days in a row before skipping a day.

If allowed to keep their eggs, they all have different amounts that form a suitable clutch for them to go broody on. Some need only 8 to 10 eggs to go broody. I have hade some that would not go broody until they had a clutch of at least 20 eggs.
