How old is too old to butcher a duck?

Like any old tough meat, They can be be eaten if cooked "Low and Slow" Thats why for chickens they have Fryers (young) Roasters (bigger older) and Stewers (usually spent laying hens that don't go to the supermarket but end up in soup or pet foods) I have been told that you can pressure cook old ducks but I have never tried it. I just stick them in a cooking bag with some vegies and some liquid (I like orange juice and/or white wine) and cook them low and slow in the oven most of the afternoon. Good luck
 
Wouldn't a good French Coc Au Vin type recipe work? (Actually, that would make it a Canard Au Vin recipe...but whatever
