how to convince someone your eggs are OK?

I had similar concerns... I tell them I've been eating them for awhile now with no incidents. I've even given away 1/2 dozens to first timers.

Be prepared though... once you hook them they'll want more. I had to buy more hens.

I didn't really have to buy more... it just seemed like a good idea.

I'm really surprised people turn down fresh eggs, i have the opposite problem! Once people knew we had chickens everyone wanted eggs! We only really get enough for ourselves!

My brother who has OCD was totally grossed out when I offered him and his wife fresh eggs. And this from a man who loves eggs. I was surprised but shouldn't have been. After all, he does have OCD and is overly concerned with "things" basically "EVERYTHING". I'm still working on him!
