How To Cook Chukars - Please help

We have a lot of those here, they're not my favorite - don't taste anything like quail or pheasant. They are very lean and dry out fast when cooking so use a method that has liquid or fat in in it. dont bake.
remove the breast, wrap in bacon and grill,
or simmer in a small amount of chicken broth and white wine then batter and fry.
