How to introduce a cockatiel to new foods?

Basically what the title says:
I got my cockatiel when he was around 6 months old from a family friend. She told me that he loves millet and bok choy (which he clearly does), but I want to introduce him to new foods since its obviously beneficial for him to have a diverse variety of fruit and veggies.

Anyone got any personal tips on how to do this? He's not 100% tame, but he's tame enough to eat out of my hand, step-up and climb onto my shoulder autonomously.

Start with sprouted seeds. They'll be familiar-looking, but will be a great introduction to moist foods. I see you're in Australia, but take a look at the information on the sprouts I buy from China Prairie. Then see if there's a similar product out by you. I use just one jar, with a screen lid. I rinse then soak the seed overnight, drain and rinse, and begin feeding. I keep it at room temperature for another day or two, then keep it in the refrigerator until the batch is gone, and start over again. I rinse twice or three times a day at room temperature, but just once per day (right before feeding) once it's in the refrigerator. I add a powdered supplement to the sprouts at feeding time, also from China Prairie. Again, you'll likely find a similar product available by you.

In my experience of offering samples to friends' birds, virtually all will eat it right away. It then becomes a vehicle for introducing new foods -- simply mix them with the sprouted seeds. Even if they pick around the new things at first, eventually they start nibbling them. And since the sprouted seeds plus supplement powder is a balanced food, even if your bird doesn't move beyond that it will still be getting what it needs to stay healthy.
