How to remove stripped screws so I can lower my roosts

Very true.

Having worked in industrial manufacturing for decades Lord knows I have removed way to many stripped screws put in by people not paying attention. A tilted bit will rip up a screw head in short order.
Same background here...bolts can be even worse, some just don't have the 'feel/touch' needed to use threaded fasteners.
 
My roosts are set on 2"x4" cross pieces on the coop walls, with a cut out section, or two pieces of wood to form a deep groove, so the roosts set into the grooves and aren't fixed in place at all. Easy to remove, or shift, for cleaning.

This is my end result after the guy who built my coop got my girls set on sleeping in a row!
