I don't know a foolproof way other than restricing access. My greyhounds all were/are egg fanatics and will eat eggs in any shape or form available. Needless to say - he will try to even get the broken shells out of the compost...
. So I have to make sure he has no access to anything remotely resembling eggs
i would think something like hot sauce or pepper or something that the dog will freak out about it if gets it in its mouth would do the trick? My cat... personally hated listerine strips ahahahaha. Plant some listerine strips on some eggs. They hate that they cant get the darn sticky thing out of their mouth ahahha
Same as with egg eating hens - poke a hole in an egg, blow it out and fill with mustard, hot sauce, dish soap or something else disgusting. When the dogs bites down he maybe thinks twice about the next one. Of course he might just smell then next one more carefully too.

buy a small jar of habernareos, get a syringe and needle, inject the juice from the peppers directly into the egg. Put a drop of wax or a small sliver of scotch tape over the injection. Let dog eat egg. Let dog be miserable. Repeat as many times as necessary till dog gets the idea. Only takes once or twice (twice with my dumb lab) and no more eggs were eaten.
