OK, I did a search on this, but found nothing. I'm wondering (obviously) how to tell if the air sac in shipped eggs is intact or not. If it's ruptured, does it move around if you candle it before you incubate it?

Yeah, it will roll around like a bubble. Do a search for "tremulous air cell" or "detached air cell" and you'll get more results including tips for getting them to hatch.
They are less likely to hatch, but it is possible - I've done it.
